Codfish with cornbread

Bacalhau com broa (Portuguese codfish with cornbread)

It´s a very popular and traditional codfish recipe, specially for festivities like Easter and Christmas

This dish combines unusual ingredients like the codfish, turnip greens and cornbread with a delicious golden result

Ingredients

(serves 4)
800 gr of Codfish
3 medium onions
3 garlic cloves
1 medium cornbread
Spinach or turnip greens
Black olives
Olive oil
Parsley
Dry bay leaf
Pepper, to taste

Instructions:


• Simmer the codfish for about 15 minutes until slightly cooked. Remove the skin of the codfish, flake it and reserve.
• Heat the oven to 200°C.~
• Start by slicing the onions in full rings and add them to a hot frying pan with olive oil, keep the heat to a medium heat and sautee the onions till golden without burning them. After getting the onions golden, add the chopped garlic and bayleafs. Let it fry for 4 minutes in medium-low heat.
• After the 4 minutes add the shredded cod and season with black pepper. Keep it on a low-medium heat without burning
• Quickly boil a pan with water with the spinach (or 10 minutes more if you use turnip greens). Rinse the greens and roughly cut them into smaller parts.
• Crumble the cornbread into a bowl, and chop the parsley. Mix everything together.
• Grease a oven tray, and start by putting some olive oil on the bottom of the tray. Place the rinsed greens as the first layer, then add the cod mixture and finally the last layer the cornbread with the parsley. Put into the oven for 180ºc for 10-15 minutes or until golden. Add a string of olive oil on top.
