Codfish with cream

Bacalhau com natas (Codfish with cream)

This fan favorite codfish recipe makes everyone go crazy about this salty delicacy! Just try it

As most of the food in Portugal, is a very hearty dish, and a simple one, combining elements from several inspirations, to produce a very lovable dish.

 

Ingredients

(serves 2)400 gr of salted Codfish
2 large potatoes
2 medium onions
1 l of 2% milk
3 garlic clove
200 ml of heavy whipping cream
100 gr of cheese (to melt)
100 gr of spinach
1 tsp of all purpose flour or starch
Olive oil
Parsley, to taste
Salt, to taste
Pepper, to taste
Dried Bay leaf

Instructions:


1. In a pan add the codfish and the milk and let it cook for 15 minutes on a medium heat. After take out the codfish, and reserve the milk, cut the potatoes into small dices, and deep fry them until golden but not completely crispy. Drain them and reserve.
2. Add a generous amount of olive oil to a big frying pan , and cut the onion into thin rings, add the onion to the oil and turn the heat on medium, add a small pinch of salt, and the bay leaf. Let the onion sweat until soft, mince the garlic and add it in. Lower the temperature to a medium to low heat.
3. After is cooled down, remove the skin and bones from the codfish, and flake it. Add it to the pan, and add the spinach, bring up the temperature, and after the spinach have shriveled, add the flour and about 100ml of the milk where you cooked the codfish, stir until you get a pasty consistensy. Turn off the heat, and add tHe potatoes, mix all toguether, and transfer everything to a oven dish.
4. Top with the cheese, and the cream. Put it in the oven on the grill function until the cheese and cream are gratinated, or golden brown. Serve with a light salad.
