Bacalhau à Minhota (Portuguese codfish Minhota style)
This delicious codfish recipe has originated in the north of Portugal, the name minhota comes exactly from that, means “Minho way”. Minho being said region
As most of the food in that region, is a very hearty dish, and a simple one, basically you fry a cod fish piece seasoned with paprika powder in hot olive oil, and in the same oil you fry the potatoes, add some delicious sauté onions on top, and that’s it. The flavor that the cod fish leaves in the oil is what makes these fried potatoes so good.
Ingredients
(serves 4)
1 kg of Codfish
4 big potatoes
2 large onions
4 garlic clove
1 red bell pepper
Olive oil
Paprika powder
Black olives
Flour
Parsley or cilantro, to taste
Salt, to taste
Pepper, to taste
Wine vinegar
Instructions:
• Peel your potatoes and soak them for at least 30 minutes. After that slice them not too thin. Wash them again, and dry them carefully with some paper cloth (they must be as dry as possible).
• Peel the onions and garlic. Slice the onions, and chop the garlic cloves.
• Add some olive oil to a frying pan and sauté the onions at a low temperature. After the onions start to golden up, slice thin the red bell pepper and add them to the mix.
• After 8 minutes add the diced garlic, let it cook for 4 minutes at a low heat and add a tablespoon of the wine vinegar.
• Dry the codfish using some paper cloth, season it with paprika powder and black pepper, and pass it through flour. Heat some olive oil on a frying pan, and when its hot enough fry the codfish on bothsides for around 8-10 minutes on each side until golden. Start with skin down (depending onthe size of your codfish you might require more or less time).
• Turn on the fryer at 180 Celsius (350 F) and fry the sliced potatoes at small quantities. After that reserve.
• Plate with fresh chopped parsley or cilantro and black olives.
