Pêras bêbadas (Drunken poached pears)
This is a great dessert recipe, specially for grownups
As most of the food in Portugal, this particular dish uses wine as one of its main ingredients, that results on a wide range of flavours.
Ingredients
(serves 2)
• 4 pears
• 4 cloves
• 100 ml Port wine (or any liquor)
• 200 ml of red wine
• 200 ml of water
• 2 tsp of white refined sugar
• One or two lemon (or other citric) peels
• 1 cinnamon stick
• 1 Star anise
• Nutmeg to taste
Instructions:
1.Peel the pears skin (keep the stem) and cut the bottom on a straight angle, to make them stand up easier.
2.On a pot place the liquids and seasonings to a boil. After it starts boiling, add the pears inside (the liquid should almost cover them laid down). Cover the pot and poach on a light boil.
3.With a fork gently test the pears, they should be easily cut without using a knife (soft). When they are soft enough remove they from the pot. Keep the liquid light boiling until it reduces to a third and becomes syrupy.
4.Serve them with the cooled syrup over them (it is a cold dessert), enjoy!
