Pastel de Nata (Portuguese egg tart)

Pastel de Nata is probably Portugal most iconic pastry! This 18-century delicacy, created in monasteries, has become a national symbol.

A recipe connected to Portugal religious past, this conventual dessert has taken the world by storm.

Ingredients

(serves 8 units)

2 egg yolks
250 ml of cream (whipping cream – 35% fat)
90 gr of sugar
one tea spoon of flour
one lemon peel
300 gr of layered puff pastry
8 pastel de nata tins

Instructions:


• Put the eggs yolks and the cream on the sauce pan (with the heat off) and gently mix them
• Add the flour and sugar while mixing
• Add the lemon peel, turn on the stove on medium heat and keep on mixing from time to time, until it starts boiling. Once it starts, turn the heat off and let it cool down.
• Coat the tins with the puff pastry (if you want you can lightly grease the tins), and fill them with the mixture almost to the top.
• And take them to a preheated oven at 250 degrees, for 12 minutes (after the 10 minute mark keep an eye on them).
• Wait at least 10 minutes before unmolding.
