Camarões à guilho (shrimp à guilho style)
A favourite from our kitchen, this shrimp recipe will make your family & friends ask for seconds! Fast and tasty recipe
Ingredients
(serves 2)
• 400 gr / 10 ounces of frozen/fresh shrimp
• Chillies (dry / flakes or fresh)
• 4 garlic clove
• 1 lemon
• Handfull cilantro/coriander
• Whisky/Cognac or Brandy
• Olive oil
Salt, to taste
Pepper, to taste
Instructions:
Get the frozen/fresh shrimp – wash it on running water and peel it (you might leave the
head/tail part or remove the shell completely).
With a peeling knife gently cut the top part of the shrimp to remove the tripe.
Reserve the heads (for added flavor).
Heat some olive oil on a skillet / frying pan and fry the shrimp head, squeezing the heads
with some utensil for added flavor (optional). After 3 minutes remove the heads (discard).
Slice 3 garlic cloves and chop some cilantro stems, and fry them slightly without burning
the garlic’s.
Add the clean shrimp to the frying pan/skillet and season with salt, pepper and some
paprika. You can also chop some chilies and them for additional kick (optional)
Fry the shrimp for 2-4 minutes (depending on size) – you want the shrimp meat to lose
their transparency – careful not to overcook them.
On the 1 minute or so add some cognac / whiskey to the mix and burn the alcohol.
Garnish them with freshly cut cilantro leaves and squeezed lime juice.
