Farofias

Farófias (Portuguese sweet meringue with custard)

Farófias are a very traditional portuguese sweet, made with a sweet cooked meringue with a sweet runny custard.

Ingredients

(serves 4)

• 2 eggs
• 4 tablespoons of sugar
• 250 ml of milk
• 1 cinnamon stick
• 1 peel of lemon
• 1 teaspoon of cornstarch

Instructions:

Separate the yolks from the whites in two bowls. In a small pan, combine 1 tbls of sugar, the milk, 1 lemon peel and the stick of cinnamon.
Start heating this mixture on medium while you whip the egg whites.
Once they are white and foamy, add 3 tbls of sugar and keep whipping untill you have stiff picks and a smooth glossy finish.

With the help of a spoon, scoop portions of this mixture to the hot milk. Let it cook 3 minutes, or until they start to grow and firm up a little. Flip them very gently without cutting through them and wait 2 more minutes.

Take them out of the milk to a serving plate. To make the sauce, on another pan, add cornstarch to the yolks and mix well. Then add a little bit of the cooking milk and mix again. Keep adding the milk slowly while mixing.

Put it on the stove again and let it cook on low heat until it thickens like a custard sauce. Serve the Farófias with the sauce on top and a bit of cinnamon powder. Enjoy.
