Peixinhos da horta (green beans portuguese tempura)
Peixinhos da Horta holds cultural significance in Portugal as a symbol of traditional cuisine and is celebrated as one of the country’s oldest recipes. This humble dish, with its roots in the 16th century, became an essential part of Portuguese gastronomy.
Peixinhos da Horta is a traditional Portuguese dish, often considered the precursor to Japanese tempura. The name translates to “little fish from the garden,” though the dish typically doesn’t contain any fish. Instead, it consists of green beans (or sometimes other vegetables) that are battered and fried, giving them a fish-like appearance.
Ingredients
(serves 4)
250 gr of green beans
Vegetable oil
75 g flour
100 ml of cold sparkling water
1 egg
Salt, to taste
Pepper, to taste
Instructions:
• Prepare the batter by combining the flour, egg and sparkling water. Whisk
everything until you have a smooth batter
• Cut the top and bottom parts of the green beans, put them in boiling water
with salt, and cook in medium low heat for 5 min. Rinse and place in cold
water with ice.
• Once cooled, pass the green beans through the batter.
• Place the oil in a frying pan (cover the bottom) and heat up on a high
temperature. Place a small amount of batter into the pan.
• As soon as the sample starts sizzling, place a portion of batter preparation
into the frying pan. Flatten it and fry until golden.
• Flip until both sides are golden. Serve with lemon and mayonnaise
